I'm still a bit new to DAGs, I can only find documentation on how to create a DAG, but nothing more in-depth.

It is usually recommended one Issue per case. :)

Witness settings are defined during DAG creation. after setting up the witness server, you will need to install at least two Exchange servers. These servers will form the nodes of the DAG and will be responsible for hosting mailbox databases. Once you have installed the Exchange servers, the next step is to configure the DAG. This involves creating the DAG object, adding the Exchange servers as members of the DAG, and configuring the DAG's properties, such as the DAG IP address and the witness server location. Before you can add the Exchange servers to the DAG, you will need to set them up as individual mail servers first. This involves configuring virtual directories, OWA, SCP, licenses, and other settings.
