How to use or get the OMA-URI of different settings and use it via Intune? Also how to use policy CSP as I am not able to see any Data type and values in below link? https://learn.microsoft.com/en-us/windows/client-management/mdm/policy-configuration-service-provider

From your description, I know you are looking for how to configure NoPinningStoreToTaskbar via OAM-URl in Intune.
Based on my testing, we can create a custom policy with ./Device/Vendor/MSFT/Policy/Config/Start/NoPinningToTaskbar OAM-URl to enable or disable pinning to taskbar. When I set the value to 1, I cannot pin apps to taskbar, and when I set the value to 0, I can pin apps to taskbar again.

Based on my testing, here are some methods you can refer to unpin MS store app and consumer Teams chat icon from taskbar via Intune.
Here are some steps you can refer to unpin Microsoft Store app from taskbar.
1.Click Configuration policies > Click Create new policy > Select Windows 10 and later as Platform, Settings catalog as Profile type > Click Create.
2.Specify a name > In Configuration settings, click Add settings > Search Do not allow pinning Store app to the Taskbar and Select Do not allow pinning Store app to the Taskbar(User) > Set it enabled.
3.In Assignment page, assign it to user group > Click Create.
4.Go to device sync it and reboot the device, then the Microsoft store app will unpin from taskbar, and you cannot pin it to taskbar.
