If the requirement is specific to M365 email activity then the closest one is to use Microsoft Graph API reports. Using this you can get a high level view of email traffic within your organization. You can also drill into the Email Activity widget to understand the trends and details of the email activity per user in your organization. Test it and see if it fits your scenario. It doesn't provide application level activity logging though.
Enterprise Application Activity Logging
We have created an enterprise application for our help desk software to be able to use graph to send email to our users. It's setup using a client key. I am not able to figure out how to see log information showing when the help desk software tries to send a message through Graph. I need to be able to audit these attempts as we have report emails over a certain size that are failing to send, so I need to see if any errors are being generated on the Microsoft side, or if the help desk application is having issues and isn't even reaching out.
The documentation around this for logging purposes is incredibly lacking; Can anyone point me in the right direction to configure something to show me what's happening with this application? None of the audit logs or sign-in logs show access. Very frustrating.
