The error message you're seeing, "Internal Server Error," can have multiple reasons:
- May fail when a large number of resources exist in the subscription. Sometimes, a large number of resources can cause issues with the restore operation. https://github.com/Azure/azure-powershell/issues/26268
- Make sure the backup itself is in a good state. Try restoring from a different restore point to see if the issue persists
