Azure Event Grid fails with 500 Internal Server Error when trying to create an Event Grid channel

I am getting this error when trying to create a channel using createOrUpdateWithResponse. I'm able to create a channel from the Azure portal without errors. Any help is appreciated!

    Issue: Azure Event Grid fails with 500 Internal Server Error when trying to create an Event Grid channel.

    Solution: An error constructing the EventTypeInfo.
