Folders in Outlook Missing after update on MacBook Pro (running Big Sur 11.2.3

All of my folders disappeared from Outlook for Hotmail, Gmail and iCloud.
There were 2 folders appearing for iCloud out of 25. I removed the account and added it back into Outlook, this didn't help and the two that were appearing have disappeared too.
I tried Preferences, General, Show all Mail Account Folders, that didn't work either.
Can you help?

    Welcome to our forum.

    Before going further, may I know what Outlook for Mac version are you using before? And what is the current version of your Outlook for Mac?

    Are you using the New Outlook for Mac? If yes, I would suggest you to switch back to the traditional version by turning off the New Outlook option like below and see if those missing folders could come back:
