We have SCSM 2016 7.5.7487.161 KB4492399 Update Rollup 7 for SCSM 2016
and same authoring items on it. Like config item, new fields for incident (with form update). We use SCORCH to automate our process.
How correct update to 1801 version, in doc System Center Service Manager 2016 with UR4 only possible to upgrade to 1801

And I have done this a couple of times before without problem.
Don't forget to upgrade SCORCH and the Integration Packs as well.

As you mentioned, An in-place upgrade from Service Manager 2012 R2 UR14 and 2016 UR4 to Service Manager 1801 is supported.

System Center 1801 is the first Semi-Annual Channel release and end of support at 08/08/2019.
