Same issue here. There's a memory leak. New outlooks memory usage keeps rising even though I'm not doing anything.
New Outlook memory usage
Old Outlook has a reputation for bloat. I used Task Manager to see how much memory Old vs New use. I was amazed to see that New Outlook uses over 1GB on my system. The "bloated" Old Outlook uses around 200MB. I thought that New Outlook was based mostly in the cloud. And with 1GB of memory, they still have a product that doesn't work as well, nor have as many features, as the Old one. Software design has changed a lot since I was doing it back in the 70s - 90s. Maybe we really should let AI do it.

Outlook is taking 3.2 GB memory !
I noticed that I had a reminder on an recent email : I disabled it and memory consumption was decreasing quickly. After that, memory consumption was stable at 400 MB ...
It's seems related to reminders on emails like a previous reply user on this post.
But after 30 mn, the memory increased again and Outlook notification told me to restart again.
