Is there a way you can have someone only comment on a shared document rather that giving them editing privileges too? As a teacher I just want other students to comment on docs and not be able to edit/alter them.

We can’t have users only comment on a document in SharePoint Online, because this action requires the editing permission.
Given the situation, I suggest you post your requirement to UserVoice, which is the best channel to influence the product.
