I test your requirement in the same version as yours on Mac.
1). Window> New Window, to get some same workbooks as the original workbook.
2). Window> Arrange…>Tiled, to view multiple sheets on one page.

You can choose Tiled, Horizontal, Verticaland Cascade arrange windows.

My problem is Excel floating around the screen with no intention of stopping either on a full line or a full column..in other words settling between these parameters. I was looking for something that would make it "snap to grid".

Is it that the right-most column's contents get cut off? If that is the case, that is normal. If you have text in cells and the text is not set to wrap, it displays on top of the cells to the right.
Select the rightmost column and press Command-1 to display Format Cells dialog. On the Alignment tab choose Wrap Text, and then adjust the column width appropriately.
