I understand your concern and I would like to convey that I have tested the behavior at my end, where I can reproduce the problem from the latest version of Excel application with the difference channels of Excel app and can reproduce the problem even after clearing the cache of Power Query folder.
In this situation, the behavior we are observing could be a bug and believe the problem should be further investigated by the related development team where they can collect the fiddler logs by reproducing the problem and investigate the issue further. (We have also reported the problem to related development team from the app feedback)
So, I request you to connect with your IT admin of your organization (How do I find my Microsoft 365 admin? - Microsoft Support) and raise a new service request from the Microsoft 365 admin center so that the related development team will connect with you and investigate the issue further.
