Based on your description, your SharePoint list’s Quick steps/inline edit is parsing dates with the US format (mm/dd/yyyy) while your site and manual entry use dd/mm/yyyy.

Confirm your personal language & region
- Go to Microsoft 365 profile > Language and region.
- Set Preferred language to one that uses dd/mm/yyyy (e.g., English (United Kingdom)) and set Region accordingly.
- Sign out/in to refresh.
Check the site regional settings
- SharePoint site > Settings (gear) > Site information > View all site settings > Regional settings.
- Set Locale to English (United Kingdom) (or any dd/mm/yyyy locale) and verify Time zone.
- If the site is associated with a hub, confirm the hub’s regional settings too.
