Using New Outlook on Windows for professional communication and productivity

Based on your description, Outlook switched from New Outlook back to classic Outlook, and the toggle to switch back (along with Copilot) is missing
When Outlook no longer meets the requirements for New Outlook (license, account type, or admin policy), it automatically switches back to classic Outlook and hides the “Try the new Outlook” toggle. Since Copilot is only supported in New Outlook, the Copilot button is also removed. This behavior is expected and usually controlled by licensing or organizational policy.

Besides that, please try to some suggestions as log out and log in to your account again to check the toggle switch appear again or not.
Try to uninstall then reinstall the app
Try searching for Outlook in the Windows search bar to check whether two versions of Outlook appear there.
Also try to switch to Outlook web version to check.
