GPay/UPI may not work just by adding it under Payment Options. For subscriptions, Microsoft usually needs the payment method to be selected again from the subscription renewal page, and UPI availability can depend on your account region and checkout page.
Here are some suggestions you can try:
Sign in at https://account.microsoft.com/services with the same Microsoft account used for the subscription. Select your Microsoft 365 subscription, then choose Manage > Renew/Resubscribe or Change how you pay, and select UPI/GPay there.
If it still fails, it is recommended that you try renewing through the Microsoft Store app on a Windows PC, as UPI sometimes appears or works better there than in a browser.
Also check that your Microsoft account region is set to India, and confirm with your bank/UPI app that payments to Microsoft are not being blocked. If the payment still will not go through, contact Microsoft billing support and ask them to check the renewal/payment block from their side.
