I apologize for this situation, I know this must be affecting your workflow a lot.
As for now, I have not found any document stated it this is an issue for version 16.108.3.
Can you please provide the steps you did when Excel crash? Are you using Pivot Table, from the table, you insert a chart. When you modify the chart with Change source data, Excel will crash immediately?
Do you store your Excel workbook in OneDrive? If yes, you can try View previous versions of Office files - Microsoft Support
If you do not have it stored on the server, last place you can check is in Finder. Recover files in Office for Mac - Microsoft Support
Additionally, if this problem recently occurred, you can try uninstalling the current version and install previous version of Excel where you don't meet this issue. You can download via Update history for Office for Mac - Office release notes | Microsoft Learn
My recommendation is version 16.104.x.
