Based on your description, the most likely reason is that To Do is opening in the My Day view. My Day is designed to reset every night, so it may appear empty the next day. Your unfinished tasks are not deleted. They remain saved in your main task list and may also reappear as suggestions later.
Note: Since it wasn't specified whether you are using the web version or desktop app, the steps below are for To Do on the web. Please let me know if you are using the desktop app and I will guide you accordingly.
Please see the following workarounds that will help you verify the issue:
Make sure your operating system, To Do app and web browsers are fully updated to the latest version.
Option 1: Check if you are in My Day instead of your full task list
Open your web browser.
Open a web browser, then go to the browser settings and clear browsing data. Set the time range to "All time" to avoid issues caused by outdated cache.
Go to https://www.office.com and sign in your work account.
Select Apps > All apps > Open Microsoft To Do.
Look at the list name on the left panel or at the top of the page.
If it shows My Day, select one of the following instead:
- Tasks.
- Planned.
If your goal is to view tasks from previous days, the Tasks list is the most complete view.
If your tasks have due dates, the Planned list is helpful for reviewing them by schedule.
Option 2: Add due dates to make tasks easier to track across days
Open a task.
Select Add due date.
Choose the appropriate date.
Tasks with due dates will automatically appear in the Planned list. This makes it easier to track both past and upcoming work without relying on My Day.

Use Tasks or Planned as your main list to see all tasks across different days.
Use My Day only for tasks you want to focus on today, since it resets automatically each night.
Option 3: If tasks are missing outside My Day
If your tasks still do not appear when using Tasks or Planned, please try the following steps:
Open To Do in an InPrivate or Incognito window.
Make sure you are signed in with the same account across all devices and apps.
Refresh the page to allow tasks to sync properly.
Go to settings in To Do > Select To Do Settings > Scroll down to Help & Feedback > Select Sync and allow some time for the process to complete.
Option 4: Contact your organization's IT admin
If the issue continues, you may consider contacting your organization’s IT administrator to confirm that your account includes an Exchange Online license in Microsoft 365 admin center.
