From my research, in Microsoft Project Professional, columns can only be inserted in a sheet-style view, such as Gantt Chart, Task Sheet, Resource Sheet, Task Usage, or Resource Usage. Columns cannot be inserted into graphical areas such as the Gantt chart bars, Timeline, Calendar, or Network Diagram. Please try the following steps to see if they help:

1.Insert an existing Project field

• Open View > Gantt Chart.
• In the table, right-click the heading of the column located immediately to the left of where the new column should appear.
• Select Insert Column.

Alternatively, you can go to Gantt Chart Format > Columns > Insert Column.

2.If "Insert Column" is unavailable

Try the following checks:

• Confirm that the table area is selected: Click a column heading on the left side of the Gantt Chart, not the chart or timescale on the right.
• Switch to the default table. Go to View > Tables > Reset to Default, then try inserting the column again.
• Exit editing mode: Press Esc, then right-click a column heading.
• Check whether the project is read-only: Look for Read-Only in the title bar, and verify that the file is not opened from a read-only location or locked by another user.
• Test another view: Select View > Task Views > Gantt Chart > More Views > Task Sheet > Apply and attempt to insert the column there.
• Test a new blank project. If insertion works in a new file, the original project’s view or table may be damaged rather than the Project installation itself.

3.If "Add New Column" has disappeared

If the Add New Column interface is missing from the table view, you can restore it via:

• Go to View > Tables > More Tables.
• Select the current table and click Edit.
• In the Table Definition dialog, enable the Show 'Add New Column' interface option.

Important distinction:

Project does not insert a completely blank Excel-style column. Each column represents a Project field. For a general-purpose column, insert one of the spare fields such as Text1, Number1, Date1, or Flag1, and then rename the displayed heading. The underlying field name remains unchanged.

If the issue continues in every view and even in a new blank project, try repairing Office from:

Windows Settings > Apps > Installed apps > Microsoft 365 or Project > Modify > Quick Repair first, then Online Repair if needed.
