Currently I do this by manually adjusting the delivery schedule for each of my evening / weekend emails.
From your description, do you mean that you manually set a delayed delivery for each email while composing message?
As mentioned in the official documentation, you can also create a rule to set a delay for sending all emails, however, based on my test, the delay time can only be set for 1-120 minutes, which cannot meet your needs. Beside, many features of our current products are designed and upgraded based on customers’ feedback. With requirements like this increase, the problem may well be released in the future. and you can also make a suggestion via this link.
So given this case, although manually setting a delayed deliveryfor each mail is troublesome, this is a solution to delayed sending that can meet your needs at present.
