As I know, only the meeting organizer can update the meeting content. Do you mean that the attendees reply with an email containing the updated attachment?
If so, considering that attendees accidentally removed your email address when clicking "reply all", it is recommended that you could contact them to confirm keeping your email address in "To" field or reply to you by using "reply".
If the above isn’t your case, please provide more information for our better research:
What's the version of your Outlook? (File > Office Account > About Outlook). Please make sure you have upgraded your Outlook to the latest version.
Can't you receive update reply from all attendees, or some special attendees?
Does this issue occur with a special meeting or all meetings?
