Outlook 365 - How to edit email subjects

We are using a shared mailbox. What we would like to achieve is to put the initial of the person who handled the email as well as the date and time when the email was handled. This way, we could count the number of emails a person handled in a day. Is this available in E1 or E3 license? Currently using OWA.

    What is the actual action that the users handle with the emails?
    For example, do they send emails or reply to emails?

    What we would like to achieve is to put the initial of the person who handled the email as well as the date and time when the email was handled.

    To my knowledge there is no built-in methods to achieve this goal.
    A workaround is to use mailbox audit log and search for the SendAs action.
    It would show the sender (user who sends emails or reply to emails in this case) and the send time of the email.
