According to my research, deleting a meeting means you just remove the meeting from your calendar without notifying the attendees. Canceling a meeting will send attendees a cancellation email and remove the meeting from their calendars.
It is recommended organizer that try to recover the meeting and send a cancel notification.
Also, the participants can manually delete canceled meetings from their calendars or click the "Remove from Calendar" from the Outlook email (Canceled meeting email).
