I just went to use Edge and the extension icon had appeared in my toolbar, I right clicked it and selected to hide it but then suddenly all my extension icons appeared on my toolbar taking up space. I now cannot hide any extensions that don't need any interaction from me (such as antivirus etc.) and they are talking up a lot of space.
I tried uninstalling it, but all I could do was Repair it, but nothing worked. I cleared my cache etc and nothing worked. All bar one extension come from the Chrome Web Store.

I seem to have managed to fix it myself by doing the following:
I am having the same issue after turning on my computer today, seems the new Edge update is full of bugs. It would be great if we could choose when to update. ; )
I am using version 92.0.902.55 and the "Hide from toolbar" option is now greyed out and I can't click it.
Edit: Here's some funny behavior I noticed. The "Hide from Toolbar" option is greyed out for each extension. If you enable the Extension Button and click on it there are new options for each extension, clicking the eyeball icon hides each extension. Great! Now turn the extension button off again to hide it and now all of the extension icons are back. : (
Someone tell me if they find a fix for this. Looking for a new browser as we speak, yet again...
