I advise you to open start and search for feedback and open Feedback Hub app and file a report and request your processor to be supported.
Windows 11 doesn't support my processor
I'm currently trying to install windows 11 on my pc. My pc meets all the requirements, except for the processor. The processor is an intel core i5 7600K 3.8GHz. It's way above the minimum requirements, yet it's not supproted. Why is that?

Only 8th generation processors are supported for Windows 11. This is been specified by the PC manufacturers for improved security and performance. I doubt there will not be any addition to the Processor now, So I would suggest you update the same.i5 7600K is not listed.

Unsupported installations may not benefit from the major improvements in performance and security.
Microsoft modifies the new operating system based upon Windows insiders.
They analyzed computers with different specifications for performance.
Those that had the list of supported CPU had > 99% crash free rate compared to < 60% for CPU not on the list.
So end users can upgrade or clean install to Windows 11.
In order to upgrade the registry and files need to be modified so that the Windows update agent does not detect the unsupported parameters:
BIOS settings, CPU, Drive partition structure, TPM, etc.These modification methods are available on other websites.
End users upgraded Windows 10 to Windows 11 or clean install Windows 11 on very old desktops, laptops, and tablets.
End users must evaluate their own risks and benefits.
