Why oh why does Windows 11 keep reverting to English US when I keep changing it to where I am, i.e. English UK? I write emails etc. and look thick as a brick because it is written in AMERICAN crap.

My signature is set to Aptos but since the latest outlook it displays as something similar to Times New Roman. It's all set up correctly in the 'manage signatures' area but when I compose a new message the fault doesn't display correctly. Any ideas?
