how do i delete an email i sent before recipient views it?

As the sender, You usually can't. Messages are typically read on so many devices, the recipient will usually be able to read it before you can recall.
Your only option is to do a message recall:

Note:
If you don’t see the Recall This Message command, you probably don’t have an Exchange account or the feature isn’t available within your organization.
